‘The Caley’, as it is affectionately known among Edinburgh locals, has embodied the very best in Scottish hospitality for over a hundred years. It recently went through a £24 million investment and renovation programme to bring the landmark Scottish property into the Waldorf Astoria Hotels & Resorts portfolio. February were brought in to work with the renowned Michelin-starred chefs Chris and Jeff Galvin on the hotel’s F&B concepts.

The Pompadour by GalvinThe Pompadour is a classic French restaurant taking its name from the celebrated Madame de Pompadour, the long-standing mistress of King Louis XV. It needed an identity to reflect the sumptuousness listed interior décor and exquisite cooking of the Galvin brothers.
The Caley BarBased on the grandeur of the old Caledonian Railway, the elegant and relaxed surroundings of the Caley Bar led us to develop an unashamedly Scottish identity for the venue.
